An honour student of the Colchester Institute, Mark enjoyed an
impressive career in Europe from Montreau Palace Hotel in
Switzerland, Brenner's Park in Germany through progressive posts
until becoming Executve Chef at Cromlix House in Scotland and a
Master Chef of Great Britian. Several years followed as Executive
Chef for Ashley House at Langoed Hall in Wales and The Inn at Perry
Cabin in St Michaels USA for seventeen years with Orient Express.

Associate Director
Nico brings with him management experience in the commerical
sector spanning thirty years. He has achieved as a General Manager
under Ladroke, Hilton and Friendly Hotels and is currently a
Director of both Alliance hotels and Terraces Hotel Co. Nico drives
procurement and purchasing delivering best quality, service and
value for our clients across all consummables from utilities to
fresh food produce, wines, spirits and insurance. Nico also works
on our rooms yield management programs.
